Traditionally, "longleaf pines" are used.
And in addition to a small hole, one can cut a bigger gash (but make sure the gash does not circle the tree, because then the tree will die). They used to collect it year round.
To collect the sap, one can hang a cup or other appropriate container on the tree.

Reply:I'm not aware of any resource that sells this, but if you can find a pine tree, you can do the same thing they do in Vermont for Maple syrup. On a warm winter day after a cold spell, get a sharp nail and hammer it into a pine tree about 1-2 inches, then remove it.
The cold day slows down the running of the sap and water into the tree. The warm day picks up the pace and sends water up into the tree, thereby creating more water pressure inside the tree's tissues to push out the sap.
